Observing guests during breakfast is one of the most underestimated and revealing opportunities available to a hotel manager. It is an apparently simple, everyday moment, but in reality, it offers an open window into the soul of service, the pulse of the team and guest behaviour. I have learned more about my hotel in one breakfast morning than in hours of reports and meetings. Breakfast is like a microscope: it reveals what is invisible to the naked eye.

During that first meal of the day, guests arrive with clear expectations: efficiency, calm, good manners, quality products, the right temperature, cleanliness, hot coffee. There is no room for error. They are half-dressed, unfiltered, vulnerable, many still unsure of their mood. There, in that space between the first bite and the first sip of coffee, the true measure of the experience takes place. And those who know how to observe will learn.
